So… I forgot to put the roast that I had laid out in the crock pot this morning. Happy Monday! Thankfully, Jeff only had to go in to work for a few hours today and he got the roast started when he came home around lunch. This pot roast is super easy and super yummy.
2 potatoes, chopped
Handful of baby carrots
1/2 cup beef broth
1 cup water
Salt and pepper
Generously salt and pepper both sides of the roast. Place the roast, carrots, and potatoes in the crock pot. Pour beef broth and water over the roast. Cook on high for 4 hours or low for 8 hours. For best flavor, shred roast and add back into juices about an hour before serving.
